I purchase the canned ingredients for this Chicken Tortilla Soup on sale and keep them on hand for nights that I don’t have time to cook. It’s almost as easy as throwing a frozen pizza in the oven, but tastier, heartier, and certainly goes a lot further. The recipe is easy to double for a larger family or potluck event.
Ingredients (serves 6):
1 can kernel corn, drained
1 can chicken broth
1 can condensed cream of chicken soup
1 can black beans, drained and rinsed
1 can Rotel chili tomatoes
1-2 cups shredded chicken – shred leftover chicken if you have it on hand or use a large can of chunk chicken
Tony Chachere’s Seasoning to taste
Shredded cheese (optional)
Sour cream (optional)
Are you ready for this complicated process? Combine the first six ingredients in a stockpot. Heat just until boiling, stirring often. I love to season with Tony Chachere’s Seasoning if needed, but you can just use some salt and cumin instead. You’re done! Serve with shredded cheese, sour cream, and tortilla chips if desired and be proud that you didn’t serve frozen pizza for dinner.
