Ingredients
1 cooked pork tenderloin, (1 pound), trimmed
Cooking spray
4 cups coleslaw mix
2 green onions, thinly sliced
1/2 cup fresh cilantro, chopped
3 tablespoons hoisin sauce
16 egg roll wrappers
Makes 16 servings
Preheat the oven to 425 degrees F. Spray a large baking pan with cooking spray.
Place the coleslaw mix and green onions in a medium microwave-safe bowl. Cover with wax paper and microwave on high until softened, 5 minutes.
Transfer to a plate and let cool slightly. Finely chop the tenderloin. Combine tenderloin, coleslaw mixture, cilantro, and hoisin sauce in a large bowl and toss to mix well.
Working with one 1 egg roll wrapper at a time (keep the remaining wrappers covered to prevent drying), place the wrapper on a work surface with one corner pointing toward you. Brush edge of wrapper with water. Spoon about 1/4 cup of the pork tenderloin mixture in the center of the wrapper.
Fold the bottom corner of the wrapper over the filling. Fold in the sides and roll up.
Place the egg rolls seam side down on a plate and cover with damp paper towels to prevent drying. Repeat with the remaining wrappers and filling.
Arrange egg rolls in a single layer seam side down in the prepared baking pan. Lightly spray egg rolls with cooking spray.
Bake until the bottoms are lightly browned, about 8 minutes. Turn the egg rolls and bake until tops are lightly browned, about 3 minutes longer. Serve hot or warm.

In order to inspire healthy diets in 2012, the National Pork Board is hosting a “Good and Good for You Challenge” which asks people to pledge to eat healthy throughout the year. For each of the four weeks of the challenge, Publix will be offering a sale on a select cut of pork. This week, pork tenderloin is on sale so you can make Baked Pork Eggrolls without breaking the bank.
In the coming weeks, look for more healthy pork recipes at Sweet T Makes Three plus an exciting giveaway! In the meantime you can get more healthy pork inspiration at Pork Be Inspired on Facebook.
This post is brought to you by the National Pork Council, Publix Supermarkets and The Motherhood. As always all opinions are my own.

They were a lot easier than I thought they would be, Karen. Once you roll a couple, you’ll be a pro in no time.
Love the idea of baked egg rolls. My husband took me out for Chinese last night and it has to be one of my favorite foods ever. I am going to have to make these with some fried rice and egg drop soup. Yummy!
Sounds like the perfect combination! Pictured with mine is a Korean bean sprout salad. Forgot to mention that in the post.
I’m seeing so many great pork recipes, most of which I’ve never thought of. My husband would enjoy this recipe. Thanks for sharing!
Who knew pork was so versatile? Hope your Hubs enjoys the eggrolls.
I’ve never tried using the egg roll wrappers. Are they easy to work with?
Surprisingly yes. I kept a damp paper towel over the stack I wasn’t working with to keep them from drying out, but I don’t really think it was necessary. I thought it was going to be like working with Phyllo dough, but it was much easier.
These look so good. I love eggrolls but I have never tried them baked.
They were so tasty baked I’d better not ever find out what they’d taste like fried.
Oh yum! These are only 100 calories? That’s awesome.
I’ve never thought of making egg rolls at home… you made that look easy!
