My friend Elisabeth (whom I constantly nag encourage to start a cooking blog) is always trying out new recipes and seems to have one for any occasion or ingredient. When I snagged some boneless, skinless chicken breast for $1.78/lb I Facebooked her for creative suggestions. She came up with a couple of options and this one was easy enough even for me.
Ingredients:
Boneless, skinless chicken breasts
Feta Cheese
Frozen spinach, thawed and drained
Bacon
Paprika
Mayonnaise
“Cut them in half to make them really thin then make a mixture of frozen (thawed) spinach, feta cheese, and a little mayo spread that on them and roll up, wrap with bacon if desired (you may need to use toothpicks) and sprinkle with paprika.”
Easy-breezy. Hubs hates mayo and I forgot about the paprika yet this dish still turned out great! Next time I may use a little mayo and tell him it’s ranch dressing. *wink* My chicken breasts were ginormous so I only used 4. Earlier in the day I purchased a mallet to use for crushing crackers and decided I’d pound a little chicken to test it out. I must have some untapped aggression because it was way too much fun. This is my aggressive face. It’s also my “something’s stinky” face. I’m a multitasker.

Ok after the chicken breasts are sliced thinly and beaten like a rug, put a little thawed, well-drained spinach on top and crumble some feta cheese over the spinach. If you are diligent in getting to Publix fairly early during their sale week you might get some of that highfalutin feta cheese that is already crumbled. If you’re like me you wind up with a block because that’s all that’s left by Sunday. If you’re husband doesn’t run screaming from mayonnaise that isn’t camouflaged into Hidden Valley Ranch and you want to incorporate it into the recipe go ahead an mix the spinach, feta, and mayo in a bowl and spread that mixture on the chicken.
Roll it up, wrap a piece of bacon around the chicken roll and add a toothpick if you are worried about it all staying together. I did and it wound up not being necessary. Don’t forget to sprinkle with paprika!
Place seam side down in a dish sprayed with cooking spray and bake. I cooked mine for 45 minutes on 400.

Holy cow those look DELICIOUS! And I laughed about the mayo thing bc my hubby does the same thing! If I tell him it's ranch cooked in he'll eat it. Of course, if I switched it on his sandwich he'd know, but once it's cooked, he has no idea

I think I’ve tried something similar, just no bacon.
Where did you get the meat hammer/tenderizer? I broke mine recently that was just like that.
